This seems to be the latest news on this for travel industry - The Visa situation isn't clear, there may be an agreement like they have with Australia, New Zealand and the US in the future but with the points based system still in place there will be no budging from any European nations on this. Funnily enough if you dont allow free movement of labour you cant have free movement of labour (as numerous EU member nations said, the UK can't have its cake and eat it).
To go more in depth using the French example as this is where most travel companies go (it is also the one that is the most difficult) An employer can apply for a temporary work permit which covers a worker for up to 90 days which they must get from the local prefecture (regional authority). However if they want the staff member to work longer they must draw up a contract and send it to the local French ministry of labour if the ministry of labour approves it this is then sent to the Office Francais de l’Immigration et de l’Integration (OFII). The OFII then approves the contract then this goes to the French embassy where the chosen member of staff must apply in person for a long-stay visa (1 year) having already registered with the French Immigration Office. This application can be rejected and thrown out at any stage.
